Ingredients
  • 6 eggs
  • 1 tomato, diced
  • 1 onion, diced
  • 1 pepper, diced
  • Spinach
  • Cheese (optional)
  • Salt
  • Pepper
Substitutions
You can substitute any of the ingredients for some of your favorites, and or add some others as you see fit! For a low-fat option, use only egg whites! 

Step by Step Instructions

Step 1

Preheat oven to 350F

Step 2

Prepare and dice vegetables; Line muffin tin with liners or use cooking spray to prevent sticking

Step 3

Whisk eggs in a large bowl; Add veggies and seasonings

Step 4

Pour mixture into muffin tin about 3/4 full; Cook for about 20 minutes
