Pasta with Broccoli and Salmon 

I love this recipe because I find it a really great way to get kids to eat or try salmon. Salmon is a GREAT source of omega-3 fatty acids- providing tons of great heart and brain health benefits. The added broccoli provides fiber and vitamin C, both important nutrients for a well-rounded meal.

Cookware
  • 1 oven safe dish 
  • 1 small pot
  • 1 medium size pot
Ingredients
  • 6- oz piece of fresh salmon fillet
  • 1 box pasta of choice 
  • 1 TBSP + 1 tsp olive oil 
  • 1 head of broccoli (or 1.5 cups frozen) 
  •  1/2 tsp salt
  • 1/2 tsp pepper

 

Substitutions
You can substitute fresh salmon for canned salmon, or any other fish of choice. 

Step by Step Instructions

Step 1

Preheat oven to 400 degrees F 

Step 2

 Sprinkle salmon with 1 TBSP olive oil, salt and pepper; place in oven and cook for 20-25 minutes (until fully cooked); when done cooking, let salmon cool and cut into cubes 

Step 3

While salmon is cooking, cook pasta according to package

Step 4

In a second pot place broccoli in boiling water and cover to steam about 4-5 minutes; once all ingredients are finished cooking, mix together and add 1 tsp olive oil 

Step 5
