Simple Egg Salad

This healthy egg salad recipe is completely mayo-free and uses simple and affordable ingredients. The whole family will love this versatile dish: Add it to salad greens, make an egg salad sandwich or wrap, or even eat it by itself – It’s that delicious!

Ingredients
  • hard-boiled eggs
  • 3/4 cup celery, diced
  • 2 TBSP lemon juice
  • 1 TBSP fresh dill, chopped
  • 1 tsp dijon mustard
  • salt to taste
  • pepper to taste
Substitutions

You can add greek yogurt, mayo, avocado, or anything else you’d prefer to make this dish more creamy!

Step by Step Instructions

Step 1

Peel hard-boiled eggs; Dice or mash 

Step 2

Place eggs in large mixing bowl

Step 3

Add celery, lemon juice, dijon mustard, salt, pepper, and dill; Stir to combine

Step 4

Serve over greens, on whole-wheat toast, or simply by itself
