South West Quinoa Salad

This salad is the perfect vegan and vegetarian-friendly meal that’s packed with protein from quinoa and black beans! You can use canned goods for most of the ingredients, making it affordable, easy, and nutritious.

Avocado is a healthy source of fat and fat-soluble vitamins including vitamin E which supports healthy skin. Tomatoes and citrus fruits like lemon and lime are great sources of vitamin C.

Ingredients
  • 1 cup quinoa, uncooked
  • 2 cups water
  • 1 can black beans, rinsed
  • 1 can corn, rinsed
  • 1 avocado, diced
  • 1 tomato, diced
  • 1-2 handfuls cilantro
  • 1-2 TBSP olive
  • lemon or lime, juiced

Step by Step Instructions

Step 1

 Add water and rinsed quinoa to a pot over medium-high heat; Bring to a boil; Simmer for about 15 minutes or until all the water is absorbed; Set aside and allow to cool 

 

Step 2

Rinse and strain black beans and corn

Step 3

In a large bowl, combine all measured ingredients

Step 4

Add olive oil and juice of one lemon (or lime); Mix thoroughly; Garnish with cilantro
