Summer Squash Pizza

Ingredients

1 pre-made whole wheat flatbread 

1 cup summer squash, sliced into coins

2 TBSP olive oil

1/2 cup plain Greek yogurt

1/2 cup Cottage cheese

1/2 tsp salt

1 tsp garlic powder

1/4 cup fresh basil

Black pepper, to taste

Step by Step Instructions

Step 1

Preheat oven to 450F; On a cutting board, slice summer squash into coins; Roughly chop fresh basil leaves

 

Step 2

Place the premade pizza crust or flatbread on a baking sheet; Drizzle and spread 1 TBSP olive oil on top

 

Step 3

Prepare white sauce: In a small bowl, combine cottage cheese, Greek yogurt, salt, and garlic

Step 4

Spread sauce on crust; Top with summer squash and basil; Drizzle 1 TBSP olive oil on top

Step 5

Bake for 8-12 minutes; Finish with black pepper to taste; Allow to cool before cutting and serving; Enjoy!
