Summer Picnic Sandwiches

These utensil-free sandwiches are perfect for a summer picnic! They are easy to make, affordable, and completely delicious. You can make plenty of variations for healthy sandwiches that everyone in the family will love.

 Health Benefit: This meal contains fiber from whole grains, cucumbers, and lettuce to help keep us fuller for longer. Hummus, feta, turkey, and peanut butter are all great sources of protein to make this a balanced meal. Feta is also a great source of calcium for healthy and strong bones. Banana provide many nutrients like potassium and antioxidants which aid heart health!

 

Cookware
  • 1 picnic basket, travel containers or plastic baggies 

Ingredients

    PB + Banana

    • 2 slices of whole grain bread
    • 1-2 TBSP peanut butter (or any nut/seed butter)
    • 1 banana, sliced (or mashed berries)

    “BLT”

    • 2 slices of whole grain bread
    • low-sodium deli turkey
    • 1/2 tomato, sliced
    • lettuce, chopped

    Greek Style

    • 2 slices of whole grain bread
    • 1/2 tomato, sliced
    • 1/2 cucumber, sliced
    • 1-2 TBSP hummus
    • crumbled feta

     

    Substitutions

    You can substitute any of these ingredients for delicious sandwiches you and your family will love!

    Step by Step Instructions

    Step 1

    Measure, slice, and chop ingredients for sandwich of choice

    Step 2

    Spread peanut butter or hummus on one slice of bread (if applicable) 

    Step 3

     

    Add remaining ingredients (turkey/tomato/cucumber/lettuce/banana) to the other slice of bread

     

    Step 4

    Combine both slices of bread to make one complete sandwich; pack in travel container or picnic basket
