Vegetables also contain B vitamins to support energy and metabolism. This dish is high in protein from ground beef, turkey, or chicken which helps maintain healthy bones and muscles.

- Loaf pan
- 1.5 lb ground beef (or ground chicken or turkey)
- 1 yellow onion, chopped
- 1 cup fresh spinach
- 1 cup mushroom, sliced
- 1 egg
- 1/4 cup breadcrumbs, regular or whole wheat
- ketchup (optional)
You can substitute/add any of the ingredients for some of your favorites. Feel free to substitute ground chicken or turkey in place of meat for a lean protein option. Any kind of breadcrumbs can be used.
Step by Step Instructions
Step 1
Preheat oven to 375 F
Step 2
Sauté vegetables; Add to a large bowl with ground meat of choice; Add remaining ingredients; Mix until well-combined
Step 3
Add mixture to a greased loaf pan; Cook for 25 minutes if using ground beef (slightly less time for white meat turkey and/or chicken)
Step 4
Optional: Brush top of meatloaf with ketchup midway through cooking
