- 2 yellow squash, shredded
- 1/4 cup corn, canned
- 2 eggs
- 2 TBSP flour
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup cheddar cheese
You can substitute/add any of the ingredients for some of your favorites. You can use any type of cheese. You can also use fresh corn on the cob.

Shred yellow squash; Squeeze out liquid using a paper towel
Step 2
Add to a large bowl with corn, cheese, eggs, flour, salt, and pepper; Mix until well combined
Step 3
Heat avocado oil in a large frying pan; Use hands to form mixture into patties; Carefully drop into pan, in batches of 3-4
Step 4
Fry until crust is golden brown; Flip and fry until golden brown on other side, about 2-3 min per side
Step 5
Transfer latkes to a large plate or baking sheet lined with paper towels; Allow to cool for several minutes; Enjoy!
