This recipe is so easy to prepare and contains affordable, nutrient-dense ingredients like chicken sausage which is rich in lean protein and a variety of veggies to add fiber for gut health.

Chicken sausage is a great source of protein for energy and lower in saturated fats than other sausage alternatives. Vegetables contain fiber for bowel health and overall health.
Sheet pan
- 1 package of pre-cooked chicken sausage
- 2 TBSP olive oil or avocado oil
- 1 yellow squash, sliced
- 2 small zucchinis, sliced
- ½ cup cherry or grape tomatoes, halved
- ½ yellow onion, thinly sliced
- Salt and pepper, to taste
Use whatever veggies you have in your fridge already and need to use, or opt for your favorites. Add fresh herbs and seasonings to your liking. You can also use any chicken sausage or other sausage you like or already have and need to use.
Step by Step Instructions
Step 1
Preheat oven to 425 F
Step 2
Line a baking sheet with parchment paper; Spread out vegetables
Step 3
Drizzle with olive oil and season with salt and pepper; Bake for 25-35 minutes
Step 4
Remove sheet from oven and add sausages on top (Optional to slice sausages into coins)
Step 5
Bake for 7-9 minutes or until warm throughout; Enjoy!
