Breakfast Quesadillas

Eggs are a great source of protein and fat to keep you fuller for longer and support brain health. Avocado is also a healthy source of fats and vitamin E to support skin health. Pinto beans contain plant-based protein and pack in fiber that promotes gut health. Tomatoes and spinach are rich inn vitamin C to boost immunity. Ingredients

1 whole wheat or corn tortilla

2 eggs + 2 egg whites 

1 cup spinach

¼ cup tomatoes, sliced

¼ cup cheddar cheese, shredded

⅓ cup pinto beans, rinsed and drained

½ avocado (optional) 

 

 

Substitutions

Feel free to make this recipe your own based on what you like or what you already have. Sub egg whites to lower the overall fat content of the recipe. You can use your favorite recipe for refried beans or use black beans instead of pinto beans. Add your favorite vegetables or any you already have in the fridge and need to use!

Step by Step Instructions

Step 1

Whisk eggs and egg whites  in a small bowl; Sauté tomatoes and spinach in a skillet over low heat

 

 

Step 2

Pour egg mixture into skillet and allow to cook over medium heat; Season with black pepper; Fold over 

 

Step 3

Place tortilla on a plate; Sprinkle with cheese and add pinto beans; Transfer egg mixture on top and fold over

Step 4

Optional: Mash avocado with a fork and spoon on top of egg mixture

Step 5

Cut into fours; Enjoy!
