Ingredients

1 box brown rice pasta

1 yellow pepper, sliced 

8-10 grape tomatoes, halved

1 cup baby spinach

4 chicken sausage links, cut into coins

⅓ cup olive-oil-based Italian salad dressing

 

 

 

Substitutions

Feel free to make this recipe your own based on what you like or what you already have. You can use any type and shape of pasta. Whole wheat pasta and chickpea pasta are two good options to pack in extra nutrients. You can also make the Italian dressing from scratch, or sub completely with olive oil, vinegar, and your favorite spices and herbs.

 

Step by Step Instructions

Step 1

In a pot over the stove, prepare pasta according to box instructions; Drain and add back into the pot

 

Step 2

Add prepped vegetables into pot with pasta; Mix to combine; The warm pasta will soften the vegetables without making them mushy 

 

 

Step 3

In a skillet over medium-heat, sear chicken sausage for about 2 min on each side; Add into pot with pasta and vegetables

Step 4

Pour in Italian dressing; Toss gently to coat 

 

Step 5

Serve warm immediately or store in the fridge and serve cold; Enjoy!
