Cold Zucchini and Cauliflower Soup
This Cold Zucchini and Cauliflower Soup is the perfect summer meal. It’s light, refreshing and filled with healthy ingredients – notably zucchini and cauliflower! This dish is easy to make, super tasty, and everyone in the family will love it.

Health Benefit: This meal has tons of fiber from cauliflower and zucchini that will help keep us fuller for longer, as well as healthy plant-based protein from beans that will maintain strong bones and muscles!
- Large pot
- Immersion blender or regular blender
- 1 head of cauliflower (or ~3 cups of frozen cauliflower)
- 2 zucchini, peeled and cubed
- 1 onion, diced
- 1/2 can cannellini beans
- Water to cover
- Salt
- Pepper
This can also be enjoyed as a lumpier, non-pureed soup! You can substitute or add other vegetables as you see fit.
Step by Step Instructions
Step 1
Over medium heat, add onion and sauté until soft, about 3 minutes
Step 2
Add cauliflower and zucchini; Cook with the pot covered for about 5 minutes, stirring every so often
Step 3
Add water and beans; Bring to a boil; Reduce to simmer and cover pot; Cook about 20 minutes
Step 4
Turn off stove; Using an immersion blender or regular blender, blend until well combined; May need to add more water if you would like a thinner consistency
Step 5
Serve hot or cold; If serving cold, let cool for 1 hour and put into refrigerator to chill; Enjoy!
