Cottage Cheese Pancakes
These cottage cheese pancakes make for the perfect breakfast because they are packed with protein which stabilizes blood sugar.
Cottage cheese is low in sugar and contains protein and calcium to support strong and healthy bones. Berries are rich in antioxidants, vitamins, and minerals for overall health. Oats contain soluble fiber to support healthy digestion.
- Food processor
- Frying pan
1/2 cup cottage cheese
1⁄2 cup oats
1 tsp baking powder
1⁄2 tsp vanilla extract (optional)
Fresh or frozen berries
Feel free to add any toppings you like! Maple syrup, honey, and fruit work well.
Step by Step Instructions
Place the oats, cottage cheese, eggs, and salt and blend until well-combined
Heat a large pan over medium heat and spray with cooking spray. Add batter to desired size and space evenly apart
Cook until set around the edges and golden-brown on the bottom, 2 to 3 minutes on each side
Transfer to a plate. Serve with fresh or frozen berries and any other toppings you like
