Falafel With Tzatziki

1 can chickpeas
3 TBSP olive oil
1/4 cup parsley, chopped
1/4 cup cilantro, chopped
1/4 cup dill, chopped
4 cloves of garlic, minced
1 TBSP ground cumin
1 TBSP ground coriander
1 tsp baking powder
1 TBSP sesame seeds
Salt and pepper, to taste
Dipping sauce
1 cup Greek yogurt
1/2 English cucumber, diced and seeds scooped out
2-3 TBSP lemon juice
1/4 cup fresh dill, chopped
1 clove garlic, minced
Salt and pepper, to taste
You can substitute/add any of the ingredients for some of your favorites. Add your favorite herbs and spices to the filling like fresh dill or garlic. You can also use green olives. To make this recipe more nutrient-dense, use a mayo made with olive oil or avocado oil.
Step by Step Instructions
Step 1
Preheat oven to 400F; Mash chickpeas with a fork or blend in a food processor; Add herbs and spices; Mix until well-combined; Add baking powder and olive oil; Season with salt and pepper to taste

Using your hands, form the mixture into even-sized balls; Repeat until entire mixture is used (should make about 12 balls depending on size)
Step 3
Line a baking sheet with parchment paper; Spread falafel balls on the tray so they are not touching; Baking for 20-30 minutes, or until lightly browned
Step 4
Prepare dipping sauce; In a small bowl, mix together the yogurt, cucumber, lemon juice, spices, and herbs; Mix together until well-combined
Step 5
Optional to garnish with more fresh dill; Serve with the falafel balls and enjoy!
