Grilled Cesar Salad With Tofu

Ingredients
  • 3-4 romaine hearts
  • 1 block tofu, extra firm
  • 3-4 TBSP olive oil
  • salt and pepper, to taste

Healthier Cesar Dressing (GF/V)

  • 1/4 cup extra virgin olive oil 

  • 2 TBSP apple cider vinegar

  • 3 TBSP lemon juice

  • 1 tsp garlic powder

  • 1 tsp dijon mustard 

  • 2 TBSP nutritional yeast (optional, but encouraged!)

  • salt and pepper, to taste
  • water, to desired consistency 

Substitutions

Step by Step Instructions

Step 1
Preheat grill to medium high heat; Press tofu: Remove from the package and let rest on paper towels for about 15-20 minutes
Step 2
Prepare Cesar dressing: Combine all ingredients in a small bowl and whisk until well-combined; Set aside
Step 3
Cut tofu into slices and chop off romaine ends; Drizzle with olive oil, salt, and pepper; Grill on each side, flipping after 1-2 minutes until lightly browned
Step 4
Remove from grill; Serve with dressing
