Hummus Veggie Sandwich

This tasty sandwich is vegetarian and contains protein from hummus and fiber from a mix of nutrient-dense vegetables.

Ingredients

2 slices of whole grain bread

2 TBSP hummus

2 TBSP sun dried tomatoes

Handful of spinach

Grape or cherry tomatoes, sliced in half

Red onion, thinly sliced

Cucumber, thinly sliced

to taste

Substitutions

Feel free to use any type of bread or substitute for a wrap. You can use homemade or store-bought hummus. Remove oil from sun dried tomatoes with a paper towel before adding to sandwich; Feel free to add your favorite veggies or whatever you already have in the fridge 

Step by Step Instructions

Step 1

Toast two slices of whole grain bread

Step 2

Spread 1 TBSP of hummus on each side

 

Step 3

Add remaining ingredients in an even layer to one slice of bread

Step 4

Close sandwich; Slice in half

Step 5

Take on the go or enjoy immediately!
