Korean-Inspired Egg Rice

Ingredients

2 eggs

1/2 cup brown rice, cooked

1 TBSP soy sauce

1 tsp sesame oil

1 tsp sesame seeds

Kimchi (optional)

Seaweed snacks (optional)

 

Substitutions

You can substitute/add any of the ingredients for some of your favorites. You can use only egg whites for a recipe that is lower in fat. You can also substitute the rice for cauliflower rice or another vegetable for a recipe that is lower in carbs. Other substitutes for rice include quinoa or any kind of rice you already have.

Cook brown rice according to box instructions

In a skillet over low-medium heat, cook two eggs to desired doneness

Add brown rice to a bowl, Transfer eggs from skillet to rice bowl

Season with soy sauce, sesame oil, and sesame seeds; Optional to serve with kimchi and dried seaweed snacks
