About 2 cups of dried pasta
1 TBSP olive oil
1 medium onion, chopped
1 cup mushrooms, sliced
2 cloves garlic, minced
3-4 cups fresh spinach, washed
Salt and pepper, to taste
You can substitute/add any of the ingredients for some of your favorites. You can add any vegetables in your fridge that you need to use up. Serve with a protein like fish, steak, or chicken to add extra protein. You can also use any type of pasta. Chickpea or lentil pasta is a great option to add more protein.

Add olive oil to a skillet over medium heat; Sauté garlic and onions until fragrant

Add mushrooms; Cook for an additional 5 minutes or until mushrooms begin to soften

Add in handfuls of spinach; Cook until wilted; Season with salt and pepper, to taste
