Summer Salad With Grilled Peaches
This perfect-for-summer salad is so easy to make and absolutely delicious. Eaten as a main meal or simple side at a family BBQ or outdoor gathering, this salad is light and super refreshing. The star ingredient is grilled peaches, which are the most fresh and juicy during summer!

Health Benefit: Peaches and spinach contain fiber which promotes bowel health. 4-5 cups of greens of choice (I use mixed greens)

2-3 large peaches, halved and grilled

1/2 red onion, thinly sliced

1/2 cup sliced almonds

1 avocado, cubed (optional)
Dressing

3 TBSP balsamic vinegar
-
2 TBSP extra virgin olive oil
-
1 tsp dijon mustard
- salt and pepper, to taste
To make this a more filling salad, add a lean protein of your choice like grilled chicken or fish. Add any other ingredients as you see fit.
Step by Step Instructions
Step 1
Heat grill; Halve and pit peaches; Place peaches face down over medium heat for 4-5 minutes; Flip and cook for an additional 4-5 minutes or until soft
Step 2
Remove from grill and set aside
Step 3
When cool enough, slice peaches and add to large bowl with salad greens; Add remaining ingredients
Step 4
Prepare dressing; Toss salad
Step 5
Serve and enjoy!
