3 large sweet potatoes
1 onion, chopped
2 cloves garlic, minced
1.5 cups uncooked lentils
4 cup vegetable stock
1 bag of frozen mixed veggies
You can substitute/add any of the ingredients for some of your favorites. Add your favorite herbs and spices to the filling. You can use any type of lentils. You can also use fresh veggies instead of frozen if you have and need to use them!
Step by Step Instructions

Preheat oven to 425F and line a baking dish with parchment paper
Step 2
Place sweet potatoes in a large pot over the stove; Cover with water and bring to a boil; Reduce heat and cook for about 20 minutes or until soft; Drain and transfer to a large mixing bowl; Mash sweet potatoes with a fork until smooth or use a hand-mixer; Set aside
Step 3
Prepare filling; Add garlic and onions to a pot with olive oil over low heat; Cook until fragrant, about 5 minutes; Season with salt and pepper to taste; Add lentils, broth, and thyme; Mix to combine and bring to a low boil; Reduce to a simmer and cook until lentils are soft, about 20 minutes

Add frozen vegetables; Stir and cook for about 10 minutes; Drain any excess liquid and transfer mixture to baking dish; Top with mashed sweet potatoes, creating a smooth even layer

Bake for 20 minutes or until the sweet potatoes are lightly browned and the edges are bubbling; Allow to cool and thicken before serving; Store in the fridge for up to one week; Enjoy!
