- Two large bowls
- Baking dish
- Whisk
- 2 cups old fashioned oats
- 1/4 cup coconut sugar
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 eggs, slightly beaten
- 1/3 cup coconut oil
- 1/3 cup plain or Greek yogurt
- 2/3 cup coconut milk
- 1/2 tsp vanilla
- 1 cup pineapple, diced
- Dried coconut flakes, as topping
Feel free to make this recipe your own based on what you like or what you already have. Use whatever type of sugar you have or omit. You can switch up the flavors by adding cinnamon. Add your favorite fruit or any you already have in the fridge and need to use!

Preheat oven to 350 F; In a large bowl, combine oats, coconut sugar, salt and baking powder.

In a separate bowl, whisk eggs, coconut oil, yogurt, coconut milk, and vanilla together

Add wet ingredients into the dry; Mix until well combined; Fold in pineapple
Step 4
Pour into greased 8×8 baking dish; Top with dried coconut flakes and bake for 30-35 minutes
