Turkey Egg Roll Bowl

This low-carb high-protein version of an egg roll is the perfect comfort meal to eat when you still want something filling that contains nutrient-dense ingredients. It’s an affordable alternative to take out.

Ingredients

1 TBSP sesame oil

1 pound ground turkey 

1 shallot, chopped

3 cloves garlic, minced

4 green onions, chopped

1 cup broccoli, finely chopped

1 small green cabbage, finely chopped

Sesame seeds to garnish

Sauce: 1/4 cup low sodium soy sauce, 1/4 cup bone broth or chicken stock, 1 TBSP apple cider vinegar, 1/2 tsp ground ginger

Substitutions

You can substitute/add any of the ingredients for some of your favorites. You can use ground beef or chicken instead of turkey. Add any vegetables you have in your fridge that you need to use. You can also use a pre-made sauce from the store, just check the ingredients for sodium content and added sugars.

Step by Step Instructions

Step 1

Prepare sauce: Combine ingredients in a small bowl and mix together; Set aside

Step 2

Cook shallot, garlic and green onion for about 3 min in a pan over low heat

Step 3

Add in ground turkey and turn up the heat to medium; Season with salt and pepper; Cook until the turkey is fully cooked

Step 4

Add in broccoli and cabbage; Cook until softened, about 10 min

Step 5

Add in sauce and mix everything together; Cook until warmed throughout; Enjoy!
