Turkey Taco Soup

Turkey is a great source of complete lean protein to support strong bones. Salsa is made with cooked tomatoes, which contain an antioxidant called lycopene. This antioxidant promotes bone health and protects against heart disease.
Large pot
1 pound ground turkey
1 jar of chunky salsa
6 cups chicken broth or stock
1 package of taco seasoning
1 bag of frozen or canned corn
1 can kidney beans, rinsed and drained
You can substitute/add any of the ingredients for some of your favorites. Feel free to make your own taco seasoning. You can also use beef or vegetable stock. The salsa can be mild, medium, or spicy depending on preference. Any bean will work, or you can omit altogether.
Step by Step Instructions
Step 1
Over medium high heat, add ground turkey to a pot; Use a spoon to break up the meat into smaller pieces
Step 2
Add in half of taco seasoning packet; Stir to combine; When ground turkey is fully cooked, pour in salsa and chicken broth; Mix well
Step 3
Cover and cook until the soup comes to a simmer, about 5 minutes; Add frozen or canned corn, beans, and the other half of the taco seasoning packet
Step 4
Reduce heat to low; Cover and cook for about 20 minutes, stirring at the 10 minutes mark
Step 5
Remove from heat and serve! Optional to garnish with fresh cilantro, crushed tortilla chips, and a dollop of Greek yogurt or sour cream alternative. Enjoy!
