Turkey Taco Soup
This turkey taco soup is a great option for weekday family dinners because it’s easy to prepare and makes leftovers that heat up well. Plus, it’s hearty and contains affordable ingredients that are nutrient-dense.
Turkey is a great source of complete lean protein to support strong bones. Salsa is made with cooked tomatoes, which contain an antioxidant called lycopene. This antioxidant promotes bone health and protects against heart disease.
1 pound ground turkey
1 jar of chunky salsa
6 cups chicken broth or stock
1 package of taco seasoning
1 bag of frozen or canned corn
1 can kidney beans, rinsed and drained
You can substitute/add any of the ingredients for some of your favorites. Feel free to make your own taco seasoning. You can also use beef or vegetable stock. The salsa can be mild, medium, or spicy depending on preference. Any bean will work, or you can omit altogether.
