Veggie Chicken Burger

This unique and delicious burger recipe was actually made up by my husband. The veggies not only provide a good amount of water, keeping our chicken burgers moist and delicious, but they also add a nice amount of fiber that make this a healthy, well-rounded meal!

Cookware
  • Oven safe dish/tin
  • Medium size pan 
Ingredients
  • 1 pounds white meat ground chicken 
  • 1 zucchini, finely chopped
  • 1/2 onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • handful of fresh parsley, roughly chopped 
  • 1 TBSP olive oil 

Step by Step Instructions

Step 1

Preheat oven to broil 

Step 2

In a heated oiled pan place onions and bell peppers and sauté about 3 minutes; Add remaining vegetables and cook until soft; shut off stove and put vegetables aside 

Step 3

Mix all chopped vegetables together with ground chicken, herbs and spices; Shape into patties (choice of size)

Step 4

Place patties on sprayed cooking dish or tin; broil on each side for 5-6 minutes (or until middle is no longer pink)

Step 5

Serve on a bun, in a salad or on its own. Enjoy!
