Seasonal Spring Salad

This seasonal salad is absolutely perfect for spring! It uses farm fresh ingredients like crisp arugula and spinach, as well as juicy strawberries for a sweet bite. Great for a light lunch or side dish, this salad is a refreshing staple for the coming months!

Ingredients
  • 3 cups spinach
  • 3 cups arugula
  • 1 cup strawberries, sliced
  • 1/2 cup walnuts
  • 1/4 cup feta cheese crumbles
  • 2 TBSP olive oil
  • 3 TBSP lemon juice
  • 2 tsp honey
  • 2 tsp dijon mustard
Substitutions

You can substitute/add any of the ingredients for some of your favorites. Feel free to add a source of protein like grilled chicken to make this a more complete meal

Step by Step Instructions

Step 1

Wash strawberries, arugula, and spinach; Slice strawberries using a cutting board

Step 2

Add greens to a large bowl with strawberries, walnuts, and feta 

Step 3

Prepare dressing in a separate bowl; Add olive oil, lemon juice, honey, and dijon; Mix until well-combined

Step 4

Add dressing to salad; Toss to coat
