Ingredients:

4 salmon fillets
1 large head of broccoli, cut into florets
3 tbsp olive oil
4 garlic cloves, minced
Zest and juice of 1 lemon
1 tsp dried oregano
Salt and pepper, to taste
Optional: red pepper flakes and grated Parmesan

 

 

Step-By-Step Directions

Step 1

Heat oven to 425°F.

Step 2

Toss broccoli with 2 tbsp olive oil, half the garlic, salt, pepper, and oregano. Spread on a sheet pan. Roast the broccoli for 10 minutes.

Step 3

In a small bowl, mix the remaining olive oil, garlic, lemon zest, and lemon juice. Brush the lemon garlic mixture over the salmon.

Step 4

Push the broccoli to the sides of the pan and add the salmon to the center. Roast for 10–12 minutes more, until the salmon flakes easily.

Step 5

Finish with extra lemon juice, Parmesan, and red pepper flakes, if using.
